Cajun Corn muffins

I decided to have fish tonight and wanted some kind of muffin similar to hush puppies, with peppers, onions, etc,....so I looked and behold Cajun Corn muffins was found in my 1001 muffin cookbook.....,
It had green peppers, onions, ...so...
                                 lets start this recipe


                                           Position the oven rack in the center
                                                    preheat oven to 400 degrees
                                             lightly grease or line with paper baking cups
                                                                   (12)
                                            In a large bowl, blend together
                                                   1 1/2 cups cornmeal,
                                                   1 1/2 cups all-purpose flour,
                                                   3 Tablespoon sugar,
                                                   1 Tablespoon, plus 1 1/2 teaspoon baking powder,
                                                   1 teaspoon cayenne pepper( I used Cajun seasoning)
                                                   1 1/2 teaspoon black pepper,
                                                   1/2 cup seeded and diced red pepper,
                                                   1/4 cup seeded and diced green pepper,(I used only green)
                                                    1/4 cup finely minced yellow onions( I used purple from the garden),
                                                    1 1/2 teaspoon salt
                           
 
In medium bowl , beat together
2 large eggs,
1/4 cup canola oil,
and
1 Tablespoon butter or margarine, melted
 
 
combine the two mixtures
( I might have added some milk here,
as I thought it was dry)
 
 
spoon batter into prepared muffin tin
filling each 3/4 full
bake for 15-20 minutes or
until cake tester or wooden
toothpick inserted in center comes out clean
Cool in pan on wire rack for 5-7 minutes
 
 
then
ENJOY!
 
you can top with Mexican Sauce , if you would like
