Well , I have decided for right now that I will be going thru the 1001 muffin cookbook and trying the recipes, I might throw in another recipe or two from other sources....
When their is sauces, creams, etc I will be posting them before the recipe they belong with it, unless they have been posted before....
this recipe I have not tried...
Mexican Sauce
makes about 2 cups
1 teaspoon instant -coffee crystals
2 Tablespoon water
1 cup( 6 -oz) semisweet chocolate chips
2 Tablespoon butter or margarine
one 14-oz can sweetened condensed milk
1 teaspoon ground cinnamon or allspice
1 teaspoon vanilla extract
In a cup, combine coffee and water; set aside.
In top of double boiler, set over simmering water, combine chocolate chips, butter, condensed milk and cinnamon. Cook, stirring constantly until smooth. Continue to cook, stirring occasionally for another 5 minutes or until mixture thickens. Remove from heat and stir in vanilla and coffee. Pour into serving bowl.

Speckled Zucchini Bread
I know more Zucchini bread recipes.....There are so many of them , so enjoy...this recipe...
This recipe has a little surprise......Chocolate....oooohhhhh
This recipe is from one of my new fav cookbook, Can ya guess which one?
yupers , the 1001 muffin cookbook, I know I need to find a different fav ,but there is so many interesting recipes in this book....
So lets get started.....
Ps ;by the way I bake in a toaster oven.
Position your oven rack into the middle position and preheat oven to 350 degrees....Lightly grease your loaf pan two 8 1/2 x 4 1/5 x 2 1/2 -inch loaf pan, As usual I made mine in the big loaf pan...
Combine the dry ingredients in a large bowl;
3 cups all-purpose flour
2 cups granulated sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 cup semi-sweet chocolate chips ( the surprise- chocolate chips)
now that we combine all those dry ,
lets focus on the wet
Beat 3 large eggs until they are foamy,
Then
Beat in 1 cup vegetable oil ( I used canola oil)
1 teaspoon vanilla extract
1/2 cup sour cream
Combine the wet into the dry
mix just until moistened
then

Stir in 2 cups shredded zucchini
ya know what comes next
mix just until moistened
then
put batter into your prepared loaf pan and bake
for 45 -50 minutes or
until cake tester or wooden toothpick
inserted in middle comes out
clean and top is golden.
Remove from the oven and cool the
pans on wire racks.
After letting cool,

Chocolate Chip -Zucchini muffins
Today`s recipe is from the 1001 muffins ,biscuits , doughnut , pancakes( ooh lala) , waffles, popovers, Fritters, Scones and other quick breads cookbook....

Line your 12 muffin tin with cupcake holders...
or grease them...
its your choice
I prefer the cupcake liners
now lets start
preheat oven to 375
dry ingredients first
combine :
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon nutmeg
1/4 cup mini semisweet chocolate chips( I couldn't find mini, so I used regular size.)
and 1/4 cup walnuts( in which I left out)
beat 1 large egg until foamy( just a little)
add 3/4 cup granulated sugar
1/4 cup milk
1/2 cup canola oil
1 teaspoon vanilla
beat alittle, mix good
fold in zucchini or rather mix in
mix the wet into the dry, just until moistened,
spoon into prepared muffin pan...
about 3/4 full
bake for 15-20 minutes or until toothpick( butter knife) come out clean
now let cool for 5-7 minutes,
if you can
I couldn't ...
warm chocolate...ooohhhhh

Chocolate-Cherry Muffins
This recipe is from the 1001 muffin book
Chocolate Cherry Muffins
first off preheat oven to 375 degrees
put rack in the center of oven
Lightly grease or line with paper baking cups(cupcake holder)
a muffin pan
now the dry ingredients
in large bowl blend together
2 cups all-purpose flour
1/2 cup graham flour
1/2 cup granulated sugar
5 teaspoons baking powder
1 cup semisweet miniature chocolate chips( I used regular size as that's what I had on hand)
one 16-oz can pitted sweet cherries, drained and chopped
1/2 cup chopped almonds( I left out)
1/2 teaspoon salt
then mix the wet ingredients in a medium bowl
2 large eggs,
1 cup plus 1 1/2 Tablespoons sour cream or cherry flavored yogurt
1/2 cup butter or margarine,melted
after mixing the wet ingredients together ,mix with the dry just until moistened
then spoon into prepared muffin pans
bake for 15-20 minutes
let cool for 5-7 minutes
and serve with butter or Maple-flavored whipped cream as book suggests
Maple-flavored whipped cream
1 cup chilled cream
1/4 teaspoon maple flavoring
In a bowl , whip cream until soft peaks form, Sprinkle the flavoring over the top and gently fold in.
Refrigerate until ready to serve
