Applesauce and Peanut Muffins

Maybe I might just do recipes from this book...even though I do have lots, I mean lots of recipes....I collect recipes...just cant get enough recipes, whether if I will ever make all of them.....
Anywho, this recipe is from the 1001 muffins cook book....

                           Applesauce and Peanut muffins
                      makes 12 muffins


                             make sure the rack is in the center of the oven and preheat oven to
                                                              400 degrees.


                                       lightly grease or use paper baking cups

 
in a large bowl ,blend together,
2 cup all-purpose flour,
1 Tablespoon baking powder,
1/4 teaspoon ground cinnamon,
1/4 teaspoon ground nutmeg,
1/4 teaspoon ground cloves,
1/2 cup chopped unsalted peanuts,
1/2 teaspoon salt
( since I used salted peanuts, I lowered the salt to
1/4 teaspoon)
 
 
In medium bowl,
Beat 2 large eggs , until frothy
 
 
then beat in
1 cup packed light-brown sugar
then
beat  in
1/2 cup milk,
1/3 cup butter or margarine, melted,
1/2 cup unsweetened applesauce
 
 
combine the wet into the dry and
combine just until moistened
 
 
Spoon batter into prepared muffin baking pan
fill about 3/4 full
bake for about 25-30 minutes
or until tops are golden brown
and cake tester or wooden toothpick
inserted in center comes out clean
 
 
cool in pan, if you can wait that long
for 5-7 minutes
 
or cool completely

Applesauce fritters

Here we are another week.....of bread making....Todays recipe involves applesauce, the deep fryer....mixer.....these are like doughnuts in a way....and I think you can guess where the recipe is from........yupers, the recipe is from the 1001 muffin cookbook.....

                                             lets get started!

                                 Applesauce fritters


                                               In medium bowl beat 4 large eggs until foamy

 
before beating in;
1/2 cup milk,
2 cup canned applesauce,
1 cup granulated sugar,
1 cup brown sugar,
3 Tablespoon vegetable oil( I used canola oil),
1 teaspoon vanilla
 
 
Stir in ;
1 Tablespoon baking powder,
1 teaspoon baking soda,
1 teaspoon cinnamon,
1 teaspoon ground nutmeg,
1/2 teaspoon ground cloves,
1/2 teaspoon salt
 
 
Stir in gently 4 1/2 cups all-purpose flour
1/2 cup at a time
( I may have not counted here or
rather loss count, when I made these)
 
 
first let me say I apologize for the pic quality
drop by teaspoon( the recipe calls for dropping by
Tablespoon , but I think teaspoon is better)
 into a deep-fryer or
Dutch oven preheated with 3-4 inches of oil to 370-375 degrees
fry for 1-2 minutes until fritters are golden brown,
using a slotted spoon lift fritter from oil
drain on paper towel
 
 
roll in more granulated sugar
and serve warm or cooled

Applesauce -Oatmeal Muffins with a Bite

  I really don't know what the bite is in these, Sorry I haven't posted, but been busy....I think I will try and at least get two bread recipes in a week....as now I'm going to be very busy....Ball games, garden , etc. ,besides knee pain....


                                                So lets start this recipe
    oh wait I forgot to tell ya where this recipe came from....of course it came from the 1001 muffin cookbook

                                        now lets start this recipe


                                                          preheat oven to 400 degrees
                                    make sure the rack in the oven is in the center position
                                lightly grease or line 12 baking cups in the muffin pan
                         In  large bowl ,blend together;
                                                                          1 1/4 cup all-purpose flour,
                                                                          1 1/2 cup quick -cooking oats
                                                                          1/2 teaspoon baking powder
                                                                          1/2 teaspoon baking soda
                                                                          1 teaspoon ground nutmeg
                                                                         1 teaspoon ground cinnamon
                                                                         1 teaspoon ground allspice
                                                                         1 cup finely chopped pecans

 
  In medium bowl,
 beat 4 large egg whites
until
 
 
foamy,
then
 
 
Beat in
 1/3 cup melted butter or margarine
1/2 cup packed light brown sugar
 
 
stir in 1 cup applesauce
 
 
combine the two ingredients just until dry ingredients are moistened
 
 
fill the prepared muffin pan
filling each 3/4 full
bake for 18-20 minutes or until tester comes out clean
or tops are golden brown
 
 
cool on wire rack for 5-7 minutes
 
 
then Enjoy with some Maple Butter
but of course I didn't make it...
will be posting the Maple Butter tomorrow

Applesauce Cake

I know Im doing a bread challenge for myself, but I like to consider this somewhat a quick bread....it has flour, shortening, applesauce......that's a bread right....
  Anywho...This recipe is from the BLUE RIDGE BOULEVARD CHRISTIAN CHURCH.....
and was submitted by Kay Evans....

                                   Lets start....
           Applesauce Cake


                                                              Cream
                                                                     2 cup sugar,
                                                                     1 cup shortening


                                                                  Add
                                                                         2 teaspoons baking soda
                                                                          that has been dissolved in
                                                                          alittle hot water


                                                        Add 2 cups unsweetened Applesauce
                                                                            !5 oz can

 
Sift together;
3 1/2 cups flour,
1 teaspoon baking powder,
1 teaspoon cloves or allspice
 
Stir into applesauce mixture, . If you want to add  raisins ( 1 cup) or Dates you can , or 1 cup chopped nuts. ( I didn't due to that fact that my family wont eat either in baked bread/Cake.) plus add 1 teaspoon vanilla

pour batter into a 9 x 13 inch pan
( I know not a typical bread pan)
Bake for 50 minutes at 350 degrees oven
 
 
Sorry I didn't get a pic of this bread/cake after it was done.
Or may I say the pics didn't turn out that great.
 
anywhoo, You can eat with or with  Icing
 
Icing
 
2 Tablespoon oleo ( butter)                         
2 1/2 cup powdered sugar
dash salt
1/4 cup milk ( half of coffee can be used)
1/2 teaspoon vanilla

Applesauce-Raisin Muffins

Another recipe from 1001 muffins
                                             Applesauce-Raisin Muffins


Preheat oven to 400 degrees. lightly grease or line muffin tin with paper baking cups.
In large bowl, blend together the dry ingredients, 1 1/2 cup all-purpose flour,1/2 cup graham flour, 2 teaspoons baking powder, 1/2 teaspoon baking soda,1/2 teaspoon cinnamon,1/2 teaspoon salt, 1/2 cup golden raisins( I used regular colored raisins, as that's is what I had)


now the wet ingredients, |in medium bowl beat 1 large eggs until foamy. Beat in 1/4 cup canola oil, 1/3 cup milk,2/3 cup unsweetened applesauce and 1/4 cup granulated sugar


Combine the wet and dry and combine until the dry is just moistened


spoon batter into prepared muffin cups and fill each about 3/4 full
Sprinkle with brown sugar( I forgot this step and the muffins still turned out great.)


Bake for 18 to 20 minutes or until cake tester or wooden toothpick inserted in center comes out clean.
Cool for 5-7 minutes


serving suggestion as per book - grape jelly, I used apple butter and again
and mmmmmm good

Applesauce Muffins

Again another recipe from 1001 muffins
Applesauce muffins makes 9-10 per recipe( but i made about 12)

first lets mix the wet ingredients, oh wait preheat oven to 400 degrees make sure to place in middle rack when ready to bake.
Lightly grease or use paper baking cups as i have
now let's mix the wet ingredients, In large bowl beat 1/2 cup butter or margarine that has been at room temperature and 1/3 cup granulated sugar together until light and fluffy. Beat in 2 large  eggs ,one at a time, beating vigorously after each addiction. Stir in 1 cup unsweetened applesauce.
now the dry,


In medium bowl combine 1 cup all-purpose flour and 3/4 cup graham flour, 1 tablespoon baking powder,1/2 cup walnuts ( I used fresh cracked black walnuts), and 1/2 teaspoon salt.


combine the two ,wet and dry and mix until the dry is just moistened


spoon batter into prepared baking cups, filling each 3/4 of the way full.
Bake for 20-25 minutes or until cake tester or wooden toothpick ( or butter knife is what I use) inserted in the middle muffin of the pan comes out clean.


cool in pan on wire rack for 5-7 minutes
I know you need to contain yourself here and wait at least 5 minutes so you can handle these to eat


Serving suggestion from book is Apple butter.
It so happens, I have made some fresh apple butter
