Beef Stroganoff

This recipe is from the Kansas City Kansan of 1967...

Beef Stroganoff
Mrs. Gary Taylor

2 pounds round steak
1 can bouillon soup
1 cup water
1 Tablespoon cornstarch
1 teaspoon salt
1 Tablespoon soy sauce
1 can mushroom soup

Remove fat from steak.
Cut into 2-inch squares. Flour lightly and brown. Add can of bouillon soup and water , mixed with cornstarch. Add salt and soy sauce. cover and simmer at least 1 1/2 hours or until fork tender. Add mushroom soup and stir until creamy. Serve over mashed potatoes or noodles.

Chow Mein...

This recipe is from the Kansas City Kansan Silver Spoon cookbook of 1967

Chow Mein

2 pounds round steak
2 Tablespoons oil
1 small onion, sliced
1 can water chestnuts, drained
1 can bean sprouts, drained
2 stalks celery, cut into 4 inch piece
1 bunch of green onions, cut in 4- inch piece
1 can mushrooms, drained
1 1/2 teaspoon curry powers
1/2 cup soy sauce
2 cups water
2 beef bouillon cubes
1 teaspoon salt
2 Tablespoon cornstarch
2 Tablespoons water

Brown meat in fat and add sliced onions. When onions ar tender, add water, bouillon cubes, salt and curry powder. cover and simmer 1 1/2 hours. Stir in mixture of cornstarch and water. Then add soy sauce and stir. Add remaining ingredients and cover. Simmer about 20 minutes.
Serve on Chinese noodles or rice.

No Bake Fruit pie

This recipe is from the Kansas City Kansan 1967...in the convenience foods section

No-Bake Fruit Pie
Mrs. Rose Humphray

10 to 12 Ginger snap or either plain cookies
1/2 cup margarine, melted
1 box coconut pudding mix
 1 can tropical fruit salad
dessert topping or ice cream

Blend cookies in blender to make a 8-inch pie crust. Add melted butter and spread on pie plate. Cook pudding as directed. Add fruit salad to pudding and pour into crust. Serve with dessert topping or ice cream

EggPlant Casserole

This recipe is from 1968 Kansas City Kansan Silver Spoon cookbook

Eggplant Casserole

1 eggplant
1 cup bread stuffing
1 Tablespoon onions
1 egg
1 cup milk
1 can mushroom soup

Peel and cube eggplant. Boil in salted water 6 minutes and drain. Combine with other ingredients and place in 12 x 8 x 2-inch baking dish. Cover with foil and place in refrigerator over night

                                    Topping

1/2 cup stuffing
1 cup cheese , grated

Place topping on eggplant mixture and bake 30 minutes at 350 degrees.

Hamburger-Franks Pot

This Recipe is from the 1967 Kansas City Kansan Silver spoon cookbook

Hamburger=Franks Pot

2 Tablespoon margarine
1 pound ground beef
1 pound frankfurters, sliced
1 onion , sliced
1 box frozne green beans
2 cups cabbage, sliced
1/2 cup catsup
2 teaspoon salt

Brown beef in margarine, breaking it up with a fork. Add franks and brown lightly. Cover with onion, beans and cabbage. Combine 1/2 cup water with catsup and salt. Pour over other ingredients making sure that cabbage is thoroly covered with liquid. cover and simmer 30 minutes.

Hamburger Cassoulet

This recipe is from the 1967  Kansas City Kansan Silver spoon cookbook

Hamburger Cassoulet

1 pound ground beef
2 teaspoons garlic juice
1 teaspoon parsley flakes
1/4 teaspoon marjoram
1/4 teaspoon basil
1/4 teaspoon onion salt
1/8 teaspoon pepper
1 egg
2 beef bouillon cube
1 can tomatoes ( No 303 can)
1 bay leaf
2 Tablespoon rice, uncooked
1 egg , slightly beaten

mix ground beef, garlic juice, parsley flakes, marjoram, basil onion salt, salt and pepper and egg. Shape into 32 balls dredge with flour. Combine bouillon cubes, 4 cups water, tomatoes and bay leaf. Add meat balls and rice. Cover and simmer 45 minutes. Just before serving, stir in slightly beaten egg.

Meat loaf with vegetables

Here is another recipe from the Kansas City Kansan`s Silver Spoon cookbook of 1967.

Meatloaf with Vegetables
Mrs. Howard H. Miller

2 pounds ground beef
1 can vegetable soup
1 egg
1/2 cup bread crumbs
1 Tablespoon mustard
1/4 teaspoon pepper
1 Tablespoon catsup
1 Tablespoon Worcestershire sauce
1 teaspoon salt
1 chopped onion

Combine all ingredients and shape into a loaf. Bake 1 hour at 350 degrees. Serves 8 to 10.

Tuna Bake

This recipe is from 1967 issue of the Kansas City Kansan`s Silver Spoon Cookbook.


Tuna Bake

1 package macaroni and cheese
3 Tablespoon soft butter
1 cup tomatoes
2 Tablespoons minced onion
1 egg
1 can tuna, drained
2 Tablespoons parsley, snipped
1/4 teaspoon salt
2 Tablespoon corn flake crumbs

Cook macaroni and cheese as directed on package. Add other ingredients. put in 1 quart greased casserole and bake for 35 minutes at 350 degrees.

Pork chops A La Virdes

This recipe is from the Kansas City Kansan...May 1967

Pork Chops A La Virdes

4 pork chops
1 small onion, diced
1 pepper, diced ( optional)
4 potatoes, cut in 1/4-inch slices
1 teaspoon salt
1/4 teaspoon pepper
1 can tomato sauce

Fry pork chops until brown and nearly done. Place in baking dish and add onion, pepper and potatoes. Season with salt and pepper and pour tomato sauce over all. Bake 1 hour at 350 degrees. Sweet potatoes may be used instead of white potatoes. Gravy may be made from drippings , 2 Tablespoon flour and 1 cup water.

Chili Fried Round Steak

Chili Fried Round Steak

2 pounds beef round steak
1 teaspoon salt
1/4 teaspoon pepper
1 egg, beaten with 2 Tablespoons water
1 cups corn flakes, finely chopped
1 teaspoon chili powder
1/4 cup salad oil
 
Cut steak into serving piece. Pound with mallet and trim off excess fat. Sprinkle with salt and pepper. Dip into egg, then in crushed corn flakes, mixed with chili powder. Brown on both sides in hot oil and cook until done.
