Fresh Fruit Sauce

Here's another recipe from the 1001 muffin cookbook, maybe I might just go thru this cookbook, it has lots of interesting recipes.....plus lots of different sauces, creams, etc...that go along with the recipes...then I wont be looking for interesting recipes ( bread)  for ya.....hmmm
    This recipe is with the All-Season Muffins
                                     anywho, here's the recipe

                       Fresh Fruit Sauce
                                 Makes about 1 1/4 cup

1/2 cup light corn syrup
2 cups any chopped fresh fruit in season
1 teaspoon lemon juice
1/4 teaspoon almond extract

    In container of a blender or food processor, combine the corn syrup, fruit, and lemon juice. Process on high speed until mixture is smooth. Pour into a serving bowl and stir in the almond extract.

Applesauce and Peanut Muffins

Maybe I might just do recipes from this book...even though I do have lots, I mean lots of recipes....I collect recipes...just cant get enough recipes, whether if I will ever make all of them.....
Anywho, this recipe is from the 1001 muffins cook book....

                           Applesauce and Peanut muffins
                      makes 12 muffins


                             make sure the rack is in the center of the oven and preheat oven to
                                                              400 degrees.


                                       lightly grease or use paper baking cups

 
in a large bowl ,blend together,
2 cup all-purpose flour,
1 Tablespoon baking powder,
1/4 teaspoon ground cinnamon,
1/4 teaspoon ground nutmeg,
1/4 teaspoon ground cloves,
1/2 cup chopped unsalted peanuts,
1/2 teaspoon salt
( since I used salted peanuts, I lowered the salt to
1/4 teaspoon)
 
 
In medium bowl,
Beat 2 large eggs , until frothy
 
 
then beat in
1 cup packed light-brown sugar
then
beat  in
1/2 cup milk,
1/3 cup butter or margarine, melted,
1/2 cup unsweetened applesauce
 
 
combine the wet into the dry and
combine just until moistened
 
 
Spoon batter into prepared muffin baking pan
fill about 3/4 full
bake for about 25-30 minutes
or until tops are golden brown
and cake tester or wooden toothpick
inserted in center comes out clean
 
 
cool in pan, if you can wait that long
for 5-7 minutes
 
or cool completely

Orange Sauce

This recipe is from the 1001 muffins cookbook, and is a feature with tomorrows recipe...
I have not made this recipe as of yet.....

                                       Orange Sauce
                              makes about 1 cup

1/2 cup sugar
1 Tablespoon cornstarch
pinch ground cinnamon
3/4 cup boiling water
1 Tablespoon canola oil
1/4 cup fresh orange juice
1 teaspoon orange zest
1 teaspoon lemon juice

   In a small saucepan, combine the sugar,cornstarch, cinnamon and water. Set over medium heat and bring to a boil. Cook, stirring constantly for about 5 minutes.
    Remove from heat and add oil, orange juice and orange zest. Cool to room temperature and serve.

Applesauce fritters

Here we are another week.....of bread making....Todays recipe involves applesauce, the deep fryer....mixer.....these are like doughnuts in a way....and I think you can guess where the recipe is from........yupers, the recipe is from the 1001 muffin cookbook.....

                                             lets get started!

                                 Applesauce fritters


                                               In medium bowl beat 4 large eggs until foamy

 
before beating in;
1/2 cup milk,
2 cup canned applesauce,
1 cup granulated sugar,
1 cup brown sugar,
3 Tablespoon vegetable oil( I used canola oil),
1 teaspoon vanilla
 
 
Stir in ;
1 Tablespoon baking powder,
1 teaspoon baking soda,
1 teaspoon cinnamon,
1 teaspoon ground nutmeg,
1/2 teaspoon ground cloves,
1/2 teaspoon salt
 
 
Stir in gently 4 1/2 cups all-purpose flour
1/2 cup at a time
( I may have not counted here or
rather loss count, when I made these)
 
 
first let me say I apologize for the pic quality
drop by teaspoon( the recipe calls for dropping by
Tablespoon , but I think teaspoon is better)
 into a deep-fryer or
Dutch oven preheated with 3-4 inches of oil to 370-375 degrees
fry for 1-2 minutes until fritters are golden brown,
using a slotted spoon lift fritter from oil
drain on paper towel
 
 
roll in more granulated sugar
and serve warm or cooled

Peachy Pecan Bread

Here's my second bread recipe for the week.
It uses canned peaches, and pecans as the name suggests
..this one is from the Blue Ridge Boulevard Christian Church cookbook.....

Before starting any recipe, read it, then make sure you have all of t he ingredients before starting....

                                          Peachy Pecan Bread

                         Drain a 16-oz can of peach slices (can use a 15-oz) reserving
                               syrup....Dice 1 cup of the peaches; set aside.

 
in blender , combine
the remaining peaches,
the reserved syrup( about 1/4 cup)
6 Tablespoon melted butter or margarine,
2 eggs
1 Tablespoon lemon juice
blend until smooth
 
 
Stir together thoroughly;
2 cup flour
3/4 cup sugar
1 Tablespoon baking powder
1 teaspoon salt
 
 
combine the egg mixture into the dry
just until moistened
 
 
stir in the diced peaches that was set aside,
plus 3/4 cup pecans( I didn't use that many)
 
 
pour into greased loaf pan
Bake at 350 degrees for
an hour
give or take a few minutes, depending
on your oven that you are using
I'm using a toaster oven , and mine
don't take the full hour
brush with about 2 Tablespoons of peach preserves
( I didn't do this)
let cool for about 10 minutes
remove from pan
and let cool on rack
 
 
then Enjoy!

Maple Butter

This recipe is from the 1001 muffin cookbook, that I so love....as you can tell......Maybe I might just focus on this book,.....nah...so many bread recipes....This recipe is a added for your pleasure.


                                     Maple Butter
                          Makes about 1 1/2 cups

1/2 cup butter at room temperature
3/4 cup plus 3 Tablespoon pure maple syrup
2/3 cup finely chopped almonds or walnuts

     In a small bowl, combine all of the ingredients and blend until smooth. Cover and refrigerate for at least 30 minutes before serving.

Applesauce -Oatmeal Muffins with a Bite

  I really don't know what the bite is in these, Sorry I haven't posted, but been busy....I think I will try and at least get two bread recipes in a week....as now I'm going to be very busy....Ball games, garden , etc. ,besides knee pain....


                                                So lets start this recipe
    oh wait I forgot to tell ya where this recipe came from....of course it came from the 1001 muffin cookbook

                                        now lets start this recipe


                                                          preheat oven to 400 degrees
                                    make sure the rack in the oven is in the center position
                                lightly grease or line 12 baking cups in the muffin pan
                         In  large bowl ,blend together;
                                                                          1 1/4 cup all-purpose flour,
                                                                          1 1/2 cup quick -cooking oats
                                                                          1/2 teaspoon baking powder
                                                                          1/2 teaspoon baking soda
                                                                          1 teaspoon ground nutmeg
                                                                         1 teaspoon ground cinnamon
                                                                         1 teaspoon ground allspice
                                                                         1 cup finely chopped pecans

 
  In medium bowl,
 beat 4 large egg whites
until
 
 
foamy,
then
 
 
Beat in
 1/3 cup melted butter or margarine
1/2 cup packed light brown sugar
 
 
stir in 1 cup applesauce
 
 
combine the two ingredients just until dry ingredients are moistened
 
 
fill the prepared muffin pan
filling each 3/4 full
bake for 18-20 minutes or until tester comes out clean
or tops are golden brown
 
 
cool on wire rack for 5-7 minutes
 
 
then Enjoy with some Maple Butter
but of course I didn't make it...
will be posting the Maple Butter tomorrow
