Rio Grande Stew

  1. Thanks for posting this--I've been looking for this recipe for years. This delicious stew was a great favorite with my family when it was published back in the late 1970s, and I lost it during one of many moves in the 80s, so haven't made it in decades. I used my crock pot, starting in the morning and adding the larger veggies when I got home from work, about an hour before serving dinner. I will make a few updates to this, using a quart of boxed beef broth instead of the can of condensed broth and water, and cilantro instead of parsley
