Happy 4th of July
With this being 4th of July , guess what I found in the 1001 muffins ,doughnuts, pancakes ,waffles ,popovers, Fritters ,scones and other quick breads book
That's right Fourth of July Muffins
so lets start......
either grease your 12 size muffin tin or use 12 cupcake holders as I have done.
Preheat oven to 375 degrees.
now the dry ingredients
blend together;
in large bowl
1 1/4 cups all-purpose flour
1 tablespoon baking powder
1/4 cup granulated sugar
beat 1 large until foamy
beat in 1 Tablespoon molasses
(remember you can spray your spoon with cooking spray to make molasses, syrup come out easy)
also beat in ;
1 cup milk
3 Tablespoons butter or margarine, melted
( looks kinda of yucky right now, right)
stir in 1 cup canned pork and beans( weird ingredient right ,that's what it calls for)
combine the wet with the dry
spoon into the prepared muffin tin
Bake for 15-20 minutes or
until toothpick inserted in middle come comes out clean
let cool for 5-7 minutes on wire rack.
brush tops with Maple Syrup glaze
cool completely!
Maple Syrup Glaze
makes 2/3 cup
1/2 cup powdered sugar
1 Tablespoon maple syrup
1 Tablespoon butter or margarine, melted
In a small bowl, combine the sugar ,syrup and butter
,blending until smooth.
Brush over muffins hot from oven
Enjoy!
